Engkabang Butter

The 'tree butter' from the forest. The fruits of the engkabang tree are rich in vegetable fat, but the trees flower and fruit very infrequently- sometimes as rarely as once every 5 years! So when they do bear fruit (usually in the months of January and February) they are highly sought after by locals. The fruits are collected, shelled, dried under the hot sun and processed into a 'tree butter' using an oil-press called a Pitan to funnel the extracted oil into bamboo tubes.
